Hi ! Renxkyoko Iglesias here !
Let me first greet you a happy, productive, prosperous, and peaceful 2015 ! !
As for me, I think 2015 is the year my life changes, for the better, I hope. I am a Microbiology graduate, minor in Chemistry, and this spring, I’ll be graduating in Forensics Science. 2 majors, 1 minor. I’ve already found my mojo, so I think that’s enough studying. I’ve had it. I’ve covered all the bases. I’m ready to face the world ! ! ! Or not. But then, this post is not about my future….. it’s about food, and my family’s Christmas celebration.
By the way, I’m sure you’ve all received WordPress’s Annual Report. Oh, my, my total number of posts in 2014 is, ta- da ! 13 . XD This post makes it my 14th post……. which is a good thing , because , to me, 13 is an unlucky number. Superstitious crap, I know. But, do you know that in the Philippines, no building has a 13th Floor. If the building has 13 or more floors, the actual 13th floor is designated as the 14th. Also, when they erect the stairs , they have this ritual of counting , from the lowest rung, Oro, Plata, Mata ( which means, Gold, Silver, Death ), and the topmost rung should not end with Mata. ( Death ) The 13th stair is Mata. There you go… a useless trivia from me. *chants* Oro, Plata, Mata, Oro, Plata, Mata, Oro, Plata, Ma….. Noooooo ! !
So, 2 days before Christmas, my Mom and I went grocery shopping at the Filipino supermarket. . We saw Queso de Bola, a standard Filipino food item and lots of chestnuts… we bought a few pounds of chestnuts , but not the cheese.
On Christmas Eve, we went to Mass at 10 PM, temperature was 33 F (~0C ). Darn, it was cold !
Those are my folks in the picture. I had to walk back to take the pic.
I practically did all the cooking ., the sweets the day before, and I prepared the main dishes for our Christmas lunch. While off the family went to bed after church, I was alone in the kitchen rolling the pork ( lumpia) chopping onions, etc. etc., etc. At 2 AM, I decided to call it a night, I mean, to take a nap for an hour or so…. but I overslept, and woke up at 9. .I had a meltdown. Just because I volunteered to do the cooking ( as as my Christmas gift to Mom who does the cooking all year round ) , it didn’t mean they wouldn’t lift a finger to help me. I was the Drama Queen for an hour or so. ” Is it done yet ? What ? So what time do we eat ? ” That was when I blew my top. My brother and sister really annoyed me. But it was Christmas. So, I just gritted my teeth and calmly told them, ” You get to eat at 3 ! ”
All’s well that ends well. So, here are the photos of our Christmas spread.
From right to left….. roast pork pork roll ( lumpia ), leche flan ( custard ) chicken macaroni salad, red velvet cake, buckeye, cheesecake, and refrigerator cake.
.Above photo is Caldereta ( beef stew in tomato sauce and liver spread. Don’t think the liver spread makes the taste weird. It’s delicious. ) The roast pork goes with liver sauce, too. ( and I love liver spread sandwich )
I wrote on my previous post that I’d cook my specialty, Paella. Well, I didn’t. We forgot to buy a major ingredient. Instead , I cooked Pancit a la Malabon ( noodles ) and fried rice. I didn’t bake fruit cake , either, a staple at any Filipino Christmas fare.
By the way, the second photo of the spread has the pictures of ube jam ( purple yam ) and pie on a cloud ( the one with white whipped topping )
.That’s embutido… just pork loaf, and oh, yeah, you can see the ube jam.
That one above are lychees and almond gelatin.
Cheesecake, buckeye ( just peanut butter, powdered sugar, dipped in choco dipping )…. and you can see the refrigerator cake, and red velvet cake, and the leche flan.
And lastly, the wine.
Okay, a few more pictures…. the opening of gifts. My annoyance at my sister disappeared when I opened her gift… a Kindle ! And dad gave me a new laptop ! !
So, I didn’t want to show myself because I was wearing pyjamas. I was so exhausted that I didn’t bother to dress up for lunch. I know. I ‘m a slob. Ha ha ha

So, that’s it…. my last post for 2014…. my 14th post. WordPress should take note of that.

Lucky 13 ! I know, right ? But definitely not in the Philippines… they really follow this superstition. The stairs in our house there ends in Oro !
Ah, I wish I could invite you guys ! ! By the way, we don’t plan to do any cooking on New years day… maybe some fried chicken or something… and noodles… definitely noodles… tha’s for long life, y’know. And round things like, oranges, etc. We should have round stuff on the table. What’s it for, I have no idea.

Ah you mean the bacon turkey? it’s literally just that, just a Bacon blanket on turkey and cook it nice and slow, it gives the turkey the crispy exterior. Ta da!
Ya, we have one max’s chicken like literally 20 minutes drive from my place, the chicken is fried so good that even the bones are yummy, heck you can snap them in half with your fingers 😮

Secondly, I have never celebrated Christmas as such. I mean not like you guys. But I have seen pictures of christmas tree and the gifts hanging from it. Thank you for giving a better perspective 😉
Thirdly, congratulations. I have always told you that I think you are a fine young woman and will do splendid in whatever you choose to do.
Fourthly, its great to see you in Philippines. Reason being a developing country like her could use your talents…
And lastly, the food! You are going to have some veg food on menu, if you plan to have me over 😉 Or, fish is equally fine ( its vegetarian right 😉 ). So… Keep that in mind

Well, I live in California, and I’m American, but that’s a nice thought. I’m sure the Philippines have enough talents there. What the country needs are companies that will hire them. Jobs, jobs, jobs.
My sister’s hubby is vegetarian. But he spent Christmas with his father in San Diego , California. His father is ill. If he was here with us, I’m sure there would be pure veggie dishes for him.

I was going to say the same thing, your mom was really beautiful. I guess the apple doesn’t fall far from the tree. Does that saying apply here? What I’m trying to say is you are both blessed with good looks.
It’s really awesome sharing the festive period in the form of a post with the world. It’s just so warm and fuzzy, it’s great witnessing it in words and pictures.
I totally get the banquet of food. My family is the same. When it comes to a celebration, we go all out with the food.

Right. That Christmas feast looks more like a banquet to me, so you’ve every right to feel a bit tired and eat in your pyjamas; Good for you. I also cooked the Christmas meal but it was not nearly as impressive as yours. we had the traditional turkey, which acquired some compliments, thank goodness, even if it is rude to speak with your mouth full. Thank you very much for your Blog posts in 2014. I always enjoy them and dread the thought of you ceasing blogging so that lose touch with you, but what can you do eh. I hope you have a lovely and wonderful 2015. You deserve it 🙂

Actually, they were all easy cooking… it was the lack of time that got me, oversleeping and all. It wasn’t that bad, really,… I prepared everything that I’d need the day before ( all onions already chopped, garlic minced, veggies washed and cleaned, etc. ). I guess that was my training in the laboratory , ha ha …

The food looks so delicious! regarding 13, it’s also an unlucky number in Denmark (and most parts of Europe I guess). There’s no row 13 on most aircrafts etc. In Japan, China and Korea, I think it’s no 4 who is the bad guy. No 4th floors etc…

A laptop and a kindle, i had a kobo once. Its not the same as an actual book, but a kindle is better than kobo! Lol
We had a lowkey christmas too. Nobody dressed up so it would be ok if you were in your pjs!!!

I’ve been telling my folks I want a Kindle. The e-books are definitely cheaper ,,,, so now I can buy as many as I can afford it.
It was rather an exhausting Christmas, Rebecca. I’m never, ever going to volunteer again. It was nice to see the fruits of my labor, though. ( at least in pictures, he he he )
Well, even if you don’t receive a WP report, I guess you have an idea how many you’ve posted… multiply it by 365 days…. and you have the daily stats to look at everyday. I don’t receive the annual report, either, and I don’t know why. When I found out everyone had received theirs, and I hadn’t, it made me wonder why, like 13 posts a year means i don’t deserve to get one, ha ha ha.

Ren, you are a wonder woman. What a beautiful gift for your family–I think of nothing more heartwarming and touching then to feed the people you love (even if the sibs are snarky and unhelpful at times–they’ll grow out of it). That’s Queso de Bola or Edam Cheese. The red color is paraffin wax, I think.

Hi Ren, it’s been a while since I visited your blog. It does not even show on my reader feed. Anyway, I am glad that you still prepare Filipino fare. Embutido is a must on the table for us (I still have 3 rolls inside the freezer). I smiled at the oro, plata, mata…hehehe! Do you know that the place where I used to work doesn’t have 13th floor too?

that’s why we like embutido… you can freeze it and still taste the same. The PAL building in Makati doesn’t have a 13th floor.

You can also see the ube jam, the one that you didn’t like in the halo-halo. Xd It’s actually delicious… quite addicting once you’ve started liking it. It’s a favorite cake and ice cream flavor.

Phiippine skyline is the 4th best in Asia, after Tokyo, Hongkong and Singapore. There’s really not much real state , it’s a small country, so structures are tall.
